I am down to help out with this, How does Tuesday and Friday sound? I have no issue setting up my self at those days, as for times, I can give 5:30ish EST as a start time for both.
But you asked for availability, Saturday night will be hit or miss for the foreseeable future. every other night is open, pending alert call.

It is EST I know it's gonna be hard to accommodate everyone time zones hence why I'm trying to get two days a week so everyone has a chance to play
