Very good question! This is a thread to get the wheels goin..

I'd say xBRIANODONNELLx nailed it with Terminal. That's the overall favourite but I have many others that need mentioning. Vacant from MW. WaW threw down most of my favourites; Asylum, Dome, Makin (day and night), I'll stop that list there.. High rise, Skidrow and Scrapyard from MW2. I enjoyed the entire Resurgence map pack (Carnival, Trailer Park, etc). Firing Range from Black Ops. Disliked just about everything to do with MW3. Yemen was a great map in my opinion, followed by Standoff for BO2. Ghosts doesn't strike any special maps until they released the first DLC with Ignition.. Not quite the MW2 Scrapyard but it was close enough. Lastly, Detroit and Comeback from AW.
I know that's a huge list and I named many maps.. But those are all unforgettable during my time with COD. I left out some Tier 2 maps from my list.. I think it would be easier to mention maps I disliked.
