Rice Pilaf - the versatile dinner assistant
I like to make this to jazz up the rice with family dinners. Pretty easy.
dice up some of the basics:
1 small red pepper (half a large)
1 small green pepper (half a large)
1 small onion
1 medium carrot (grate it for speed)
1 stalk celery
1 clove garlic
sautee these in butter, in your rice pot, on medium heat. Adding salt, pepper, and whatever spices you like. I use chilli flakes, sage, or italian seasonings. Sautée until golden brown.
Add your liquid at this point. Water is fine but for added flavour I will use some chicken or beef broth. Cook rice as normal.
done deal.
Now....I also use this mixture or a variation of it...to stuff beef rouladin (large thinly sliced inside beef round roast pieces) into these rice filled meat torpedoes of goodness. I also have stuffed bell peppers and tomatoes to roast in the oven with cheese on top.
Cheers
