I haven't tried but I believe so. Battlelog has two separate profiles, one for the 360 and one for the X1. I am currently maxed out level-wise on the X1, level 110. When I click on the 360 profile, it shows me at level 69, which was the level I was at when I switched over. So, I think it simply makes a copy of your level / stats and then your progress on each console is tracked separately.
