Updated ... I really pushed hard recently to unlock the last Sniper rifle.

Weapons

11 of 13 Assault (two remaining are from the DLC, one not yet released)
10 of 11 Carbines (one remaining is from a not yet released DLC)

10 of 11 LMGs (one remaining is from a not yet released DLC)
10 of 11 PDWs (one remaining is from a not yet released DLC)
6 of 8 DMRs
9 of 11 Snipers (one is from a not yet released DLC, one I need to keep getting Marksman Ribbons, as in distance headshots)

7 of 7 Grenades
7 of 11 Knives (two knives from unreleased Premium content)

For vehicles, similar to weapons, Unlocks then Vehicles tab. It shows the progress numbers on the same line as the category.

*I'm pretty sure that the distance required is not 250m like the ribbon says on battlelog, but something less.

Since I've unlocked most weapons, I'll be focusing on unlocking attachments next. I'll usually take a gun to 500+ kills before switching.
